Adding bottle gourd to a cake might sound weird but it does give it a different taste. Don’t forget to add the vanilla though because that will mask the distinctive smell that this vegetable has.

1 medium bottle gourd A pack of butter 3 cups flour 2 teaspoon baking soda 2 cups sugar 2 eggs 1 teaspoon vanilla
Method
Peel the bottle gourd and then cut into thick circles
Boil with a pinch of salt till tender
Press into a cloth till all water drains out
Keep them aside
Sift flour and baking soda in a bowl
Add butter and sugar and beat well
Add one egg at a time and beat well
Add the cream and vanilla and stir it in till all the lumps dissolve
Grease a baking cake pan
Pour a little cake mix and add a layer of the bottle gourd
Keep alternating till all the bottle gourd pieces have been placed
Bake till a fork inserted into the cake comes out clean.
The taste of fudgy chocolate, the earthen beetroot and the caramelized dates makes this a very rich cake. It will make you wish that you never grew up.

Method
Scrap the skin of the beetroots, chop and boil them in water with a pinch of salt
Boil the date in a separate pan till soft
Add the beetroot with sugar, cream, eggs and dates in a blend and puree well
In a bowl sieve the flour and then add the grated chocolate and baking powder
Add oil to it and stir
Add the beetroot mixture and stir well till all lumps are removed
Pour batter into the butter greased oven proof bowl
Since the cake tends to be fudgy, the fork won’t come out clean when inserted even after the baking’s done (bake for half an hour)
