Anda Bharta

Are you bored of the same-old omelette-bhurjee routine? Then let this wonderful Anda Bharta or spiced egg mash by Mayur Sanap liven up your ghar-ka food scene. A straight-forward recipe, requiring not much prep time, it puts leftover boiled eggs to good use. Have it on toast, or with parathas or mashed into your rice.

Parsi Prawns-Stuffed Omelette

Egg On Naan

Naan with toppings is Dublin-based Nadisha Daniel's quick-fix dinner meal. She buys the easily-available naans from the local grocery store and uses a bunch of toppings including an egg. Egg on naan, as over-the-top fusion as it may sound, is a Indian-ish adaptation of the Mexican tortilla-egg preparation huevos rancheros.
