Ramzan recipe: How to make Almond Phirni

Today, Reshma brings you this super-easy recipe for Phirni

Phirni is a classic Indian dessert and a must-have for festive occasions -- be it Ramzan or Diwali.

As it happens, this creamy dessert is also very easy to make!

Ingredients:

  • 1 litre milk
  • 1/4 litre cold milk
  • 100 gm rice washed, dried in the sun and then powdered.
  • 1 cup sugar
  • 10 almonds, blanched.
  • 5-6 almonds, cut fine
  • 5-6 pistachios, chopped
  • Few drops of vanilla or kevda essence
  • 50 gm mawa

Method:

  • Soak 10 almonds in a cup of boiling water. Drain and wash with cold water. Peel the skin and grind with a spoonful of water.
  • Boil the 1 litre of milk. Pour enough of the cold milk over the rice powder to make a paste.
  • Add the rice paste, almond paste and sugar, to the balance boiling milk and let it cook till the milk thickens.
  • Add mawa. Keep stirring.
  • Once thickened, take off heat, add essence and stir very well.
  • Garnish with the remaining almonds and the chopped pistachios and refrigerate.

Note:

For best results, use basmati rice or else use modak flour that is readily available in the market.
