Egg recipes: Akuri and Parsi Pora

Try out these simple and traditional egg recipes.

Eggs, we all know are rich in proteins and provide vital nutrients that are good for the bones, muscles, skin, hair and blood.

In fact, for those of you who cut down on carbohydrates-rich food to lose weight, switching to eggs can be a healthy option.

It provides instant energy and a quick protein refill.

It's easy to cook and requires minimum oil.

Here are some traditional Parsi recipes made from eggs for you to try. 

Akuri (Savory scrambled eggs)

Serves: Four

Ingredients

  • 6 well-beaten eggs
  • 1 large onion sliced fine and fried light brown
  • 1 small tomato chopped
  • ½ tsp jeera
  • 1 pinch chilly powder
  • 1 clove garlic
  • 1 tab chopped coriander leaves
  • 1 green chilly finely chopped
  • 1 tbsp ghee or butter
  • Salt to taste

Method

  • Heat the butter in a small pan.
  • Fry the jeera, garlic, chilli and tomatoes.
  • Lower the heat, cover the pan for about five minutes.
  • Now add the fried onions and chilly powder, the beaten eggs and mix well.
  • Add salt and mix gently till eggs are done to preferred firmness.
  • Do not make it too thick.
  • Serve with hot chapatis or bread and butter.

Parsi Pora

Parsi Pora

This traditional Parsi recipe takes less than 10 minutes to prepare and is both healthy and tasty.

Ingredients

  • 6 well-beaten eggs
  • 1 medium onion chopped
  • 1 small tomato chopped
  • 1 tab coriander leaves finely chopped
  • 1 green chilli finely chopped
  • Oil or butter for frying
  • Salt to taste

Method

  • Pour beaten eggs into a bowl and set them aside.
  • Heat 1 tbsp oil or butter in a large frying pan and fry the onion, chilli, tomatoes and coriander till onions turn pink.
  • Add the fried mixture into the bowl with eggs and mix well.
  • Add salt and stir well.
  • Heat 2 tbsp oil or butter in the pan and pour a quarter of the mixture.
  • Cook well on one side and turn to cook the other side till done.
  • Serve with bread and butter or as an open sandwich with a little tomato sauce on top.
