It doesn't take a lot to toss up these breakfast dishes. Try them out! Kanchan Maslekar lists out some:
Have breakfast like a king, lunch like a prince and dine like a pauper -- goes the old saying, indicating the importance of breakfast. But with changing lifestyles there is little time to cook an elaborate breakfast. Here are a few easy but filling and healthy breakfast recipes:
Power Poha
Ingredients
- 2 cup poha
- 1 cup soaked gram dal
- 1/2 cup soaked soya chunks
- 4 tbsp roasted peanuts
- 2 chopped onions, chopped
- 1 tsp mustard seeds
- 10-12 curry leaves
- 2 tsp finely chopped green chilies
- 2 tsp finely chopped garlic
- 2 tbsp lemon juice
- 1 1/2 tsp turmeric powder
- 2 tbsp oil
- 2 tbsp chopped coriander
- Salt to taste
Method
- Soak the Poha in the water and drain the excess water by pressing them with both your hands. Leave aside.
- Heat oil in a wok. Add mustard seeds, curry leaves, green chilies and garlic and stir fry.
- Now add onions, and saute for 2 minutes .Add turmeric powder and salt and saute for 1 minute. Now add the dal, soaked soya chunks, roasted peanuts and cook for 2 minutes.
- Add the soaked poha. Stir and mix well all the ingredients. Cover and cook for another four minutes.
- Serve hot.

Ingredients
- 2 eggs
- 1 tsps grated parmesan cheese
- 1 cup spinach leaves
- 1/4 tsp grated onions
- 1 finely chopped chilli
- A pinch of nutmeg powder
- Salt and pepper to taste
Method
- Beat the egg whites and stir in the baby spinach, parmesan cheese and green chilly. Add the onion powder, nutmeg, salt and pepper.
- On a non stick pan cook the egg for three minutes until partially set. Flip with a spatula and continue the other side.
- Serve hot. (You can also add vegetables of our choice to the omelettes in addition to the spinach)
