Crispy Bread Rolls: 15-Min Recipe

Spiced potato filling wrapped in bread and then fried is just the snack for a late afternoon piping hot cup of tea or coffee, when the hunger pangs come calling. Recipe courtesy: Swetha Iyer.

Ingredients

  • 6 slices bread
  • 2 large potatoes, baked or boiled, peeled, mashed
  • Salt to taste, about 2 tsp

  • 1 onion, chopped
  • Pinch haldi or turmeric powder
  • 1 tbsp oil + oil for deep frying

  • 8-10 curry leaves, chopped
  • 2 green chillies, finely chopped

Method

  • In a frying pan, over medium heat, fry the chopped onion in 1 tbsp oil.
    When golden, add in the potatoes, green chillies.

  • Add in the curry leaves, salt, turmeric and cook a few minutes more, take off heat and keep aside.
  • Cut and discard the sides of the bread slices.

  • Slightly dampen the bread with a little water, ensuring it does not turn soggy or too moist.
    Place 2 tbsp of the potato filling in the centre of a bread slice and slowly roll into a ball.
    Repeat for the rest of the bread slices.

  • Deep fry in a frying pan or a kadhai till golden brown.
    Drain onto a paper towel-lined plate.
  • Serve hot with ketchup or chutney; Makes 6 servings.
