Green Bonda: 25-Min Recipe

Asha Suturia's crunchy Green Bondas are made from green mung and a little rice, ideally had with chutney.
The dal needs a few hours to soak, but the wadas take less than 25 minutes to make.

  • 1 cup green saboot mung or whole green gram
  • 1 tbsp rice
  • 4-5 green chillies

  • 1-inch piece ginger
  • 1 onion, finely chopped
  • ½ cup chopped spinach

  • Pinch hing or asafoetida
  • ½ tsp coarsely powdered black pepper
  • ¼ tsp jeera or cumin seeds

  • Salt to taste, about 1 tsp
  • Oil for deep frying

Method

  • Soak the mung and rice together for 4-5 hours.
  • Grind the soaked mung, rice with the ginger, green chillies, spinach coarsely and add the rest of ingredients.

  • Heat the oil over medium heat and drop lime-size balls in hot oil.
    Fry till golden and drain on a paper towel-lined plate.
  • Serve hot with tomato ketchup or mint chutney; Serves 3-4.
