How to Turn Veggies Into Healthy Spaghetti Pasta or Noodles

Ingredients:

  • 3 Zucchinis or Cucumbers (any of them work)
  • 3 Tbsp Butter or Olive Oil
  • ¼ cup Walnuts / Cashews (any of them work)
  • 2 Garlic Cloves
  • 2 Cups Fresh Basil
  • 2 Teaspoons Lemon Juice
  • ½ Cup Cheddar or Parmesan Cheese
  • Salt to Taste
  • Pepper to Taste
  • ½ Teaspoon Oregano
  • ½ Teaspoon Chilly Flakes

Method:

1. Take 2 Tbsp olive oil, walnuts or cashews, garlic cloves, fresh basil, lemon juice, cheese & salt in a mixer grinder and grind a course paste. The consistency should be similar to the regular Indian green chutney. This paste is called “pesto”.

3. In a non-stick pan take 1 Tbsp olive oil. Once it heats add the pesto paste prepared in step 1. Add zucchini or cucumber noodles, oregano, chilly flakes, salt & pepper. Cook for only a minute or so & switch the heat off. Toss the noodles till well coated with the pesto paste & spices.

Note: You can try the same recipe with carrots instead of cucumber or zucchini
