Recipe: Chicken Dum Biryani

Getting the hang of making dum biryani at home is not hard at all. Ravi Sharma has an easy, step-by-step recipe for Chicken Dum Biryani and the end result is comforting and irresistibly delicious.

Ingredients

  • 400 gm basmati rice
  • 400 gm chicken
  • 2 tbsp ginger-garlic paste

  • 3 tbsp yoghurt
  • ½ tsp brown dhania or coriander powder
  • ½ tsp jeera or cumin powder

  • ½ tsp red chilly powder
  • 3 green chillies

  • 1 medium-sized tomato
  • 4 medium-sized onions
  • 3 tbsp garam masala or biryani masala

  • Salt to taste, about 2 tsp
  • 4 tbsp oil + extra few tbsp to fry the onions
  • Handful fresh green dhania or coriander leaves or cilantro, chopped
  • Handful mint, chopped

Method

  • Partially boil the rice, in a saucepan, over medium heat, till it gains a white colour.
    Drain the water and keep the rice aside.

  • Blend all the 1 tsp salt, spices, ginger-garlic paste, tomatoes with the chicken.
    In a flat-based aluminium saucepan, add the oil and arrange all the chicken pieces on the bottom.

  • Mix the remaining salt into the partially boiled rice and spread the rice evenly on the chicken and the masala.
    Sprinkle the garam masala over the rice.
    Cover tightly (maybe using aata or dough to seal the container) and cook over low heat for 25 minutes.

  • Cut the onions lengthwise
    In another kadhai heat a few tbsp oil and fry the onions over medium heat till golden brown.
  • After the rice is done, add in the fried onions, chopped coriander, mint and mix well with the biryani.

  • Continue to heat over low heat for another 5 minutes.
    Take off heat and serve hot with a raita.

Tips
For better tasting biryani, marinate chicken pieces in the blended masala for at least one to two hours
