Recipe: Spicy Cheesy Pinwheel Bread Rolls

A wee round of easy baking is a chance to serve up a simply scrumptious breakfast.
These rolls come out of the oven piping-hot, golden, melty with cheese, each swirl hiding a riot of flavours.

Ingredients

  • 2 cups maida or all-purpose flour + extra for dusting rolling surface
  • 1 cup aata or whole wheat flour
  • 1 tsp salt

  • 1 tbsp sugar
  • 2 tbsp active dry yeast + ½ cup lukewarm water
  • 4 tbsp extra virgin olive oil + extra to grease the baking tray

  • ¼ cup mixed dry herbs like rosemary, parsley, basil, thyme, oregano
  • 1 tbsp red chilly flakes

Method

  • Add the sugar to the yeast-water mixture.
    Let it rest for 10 minutes till the mixture froths up.
  • In a large bowl, mix the maida, aata, salt, yeast mixture.

  • Add a little water and make a smooth dough.
    Add in 2 tbsp of the olive oil and knead the dough well for 10 minutes.
  • Cover and let rest 10 minutes.

  • Dust a flat surface with maida and roll out the dough into a large rectangle about ½ inch thick.
    Brush the surface with remaining 2 tbsp olive oil.
    Sprinkle the dried herbs, chilly flakes, flax seeds, evenly over the entire surface.

  • Roll up the dough into a log shape.
    Using a very sharp knife, cut 1-inch thick rounds off the log.
    Place each round, as it's cut, onto a greased baking tray, ½ inch apart.

  • Let the rounds rest on the tray in a warm place till they double in volume, about 1 hour.
    Do not poke the dough at this time.
  • Bake the rolls for about 30 minutes in an oven preheated to 200 °C and serve hot, straight out of the oven.

Tips
Use the same maida-aata base, but instead of mixed spices and cheese, sprinkle the rolled-out rectangle with a mixture of brown sugar, cinnamon, raisins, other dried fruits, nuts and brush generously with butter and then roll up the dough into a log and follow the rest of the steps as per the recipe.
