Rawa Bhakri: 10-Min Recipe

Bhakri, also known by various other regional names, is a circular, unleavened bread that is part of traditional meals in Maharashtra, Gujarat, Rajasthan, Karnataka.

Ingredients

  • 200 gm suji/rawa or semolina
  • 200 ml water + a little extra cold water to mix in

  • 1 tbsp ghee
  • 1 tsp salt

Method

  • Bring water to a boil in a thick-bottomed saucepan and add the ghee, salt.
    Then add the rawa and mix well.

  • Take off heat and keep aside for 10 minutes.
    Add a little bit of cold water to the mixture.
    Mix continuously for 10 minutes, till it comes together as a dough.

  • Heat a tawa over medium heat.
    Take a small ball of the slightly-cooled dough and roll round like a chapatti.
    Roast the bhakri on the hot tawa both sides and serve warm.
  • Repeat the same process for the rest of the dough; Serves 2.

Tips
Bhakris can be served with various kinds of vegetarian or non-veg curries or simply plain with pickle or thecha (a spicy Maharashtrian condiment for which red/green chillies are ground to a paste with ingredients like garlic, lemon, green mango).
