Poha Cutlet: 10-Min Recipe

Poha can be the way to the centre of a cutlet and to the centre of your heart.
Chef Roopa Nabar creates a kurkura teatime snack from flattened rice, potatoes and vegetables.

Ingredients

  • 1 cup thick poha or flattened rice flakes
  • 1 large boiled potato, mashed
  • 1 cup boiled mixed vegetables, like carrots, beans, peas

  • 1 small onion, finely chopped 
  • 1 tsp ginger-garlic paste
  • ½ tsp haldi or turmeric powder

  • ½ tsp chilly powder
  • ½ tsp garam masala powder
  • 1 tsp dried amchur or mango powder
  • Oil for frying the cutlets

  • 1 tsp til or sesame seeds
  • Salt to taste, about 2 tsp
  • Pinch sugar
  • 2 tbsp chopped fresh green dhaniya or coriander leaves or cilantro

Method

  • Soak the poha for 5 minutes, drain, and squeeze out excess water.
    Combine the poha with the potatoes, vegetables, spices.
    Mix well and shape into oval cutlets.

  • Preheat an air fryer to 180°C.
    Lightly oil a silicon tray and place the cutlets on it, brush the tops with oil.

  • Air fry the cutlets at 200°C for 4 minutes.
    Flip, brush again with oil, and air fry for another 4 minutes till crisp and golden.
  • Serve hot with green chutney.
