Mushroom & Chicken: 20-Min Recipe

Chicken and mushrooms come together, along with other veggies like broccoli, bamboo shoots, in Aditi Bose's classic Chinese entree, that makes a meal with fried rice.

Ingredients

  • 2 cups shredded boneless chicken
  • 1 cup sliced mushrooms
  • 1 cup chopped broccoli
  • 1 tbsp corn starch

  • 1 tbsp sugar
  • 5-6 tbsp vegetable oil
  • 1 tbsp oyster sauce

  • 1 tbsp soy sauce
  • 1 tbsp rice wine
  • 5-6 tbsp chicken broth (can reserve while boiling the chicken)

  • 2 pods garlic, chopped
  • 1 cup chopped bamboo shoot
  • ½ cup roasted cashews

Method

  • In a frying pan heat 2-3 tbsp vegetable oil till it begins to smoke and add the mushrooms, bamboo shoot, garlic, broccoli, cashews.
  • Fry for a few minutes and transfer to a bowl and cover.

  • In a bowl, combine the cornstarch, sugar, with the sauces, rice wine, chicken broth.
    Keep aside.

  • In another frying pan, heat the remaining 3 tbsp vegetable oil and fry the chicken.
    Once it browns add the cornstarch mixture.

  • Cook for 4-5 minutes and add the mushroom mixture to it.
    Stir it all in together and serve piping hot with fried rice or noodles.
