Mother's Day Recipe: Berry Chocolate Mousse

A delicious fruity mousse, ready in 10 minutes... Make it for Mom!

Ingredients

  • 5 almonds, soaked, skinned
  • 5 seedless dates, soaked
  • 5 cashews, soaked

  • 4 tbsp cocoa powder
  • 1 tbsp desiccated coconut
  • 2 tbsp frozen strawberry puree

  • 1 tsp orange juice
  • 1 tbsp cocoa butter, available online or substitute with equal amount of cold coconut oil
  • 1 tbsp honey

Method

  • Melt the cocoa butter in a saucepan.
    Add the honey, orange juice, orange zest and mix.
    Keep aside.

  • In a blender/mixer, blend all the dry ingredients, along with the strawberry puree and the desiccated coconut till a smooth paste.
    Now add the cocoa butter mixture and blend till a smooth mousse consistency is achieved.

Method

  • Pour into 1-2 small glasses.
    Refrigerate for 10 minutes or more.
    Serve chilled; serves 1-2.

Tips
Choose a high-quality cocoa for the mousse for a better taste.
Instead of strawberries use any berry puree of your choice.
Decorate with grated coconut and fruit, if you prefer.
For a mousse with a kick, add 1 tsp rum or a liqueur of your choice.
The mousse takes hardly 10 minutes to put together; chilling time extra.
