10-Min Recipe: Mango Chicken Sandwich

Mango and walnuts make for a great dosti, especially inside curried chicken sandwiches.

Ingredients

  • 150 gm cooked chicken breast
  • 1 stalk celery, finely chopped
  • 1 small red onion, finely diced
  • 1 raw mango, partially ripened, like totapuri, deseeded, finely chopped

  • 90 gm walnuts, toasted, chopped
  • 1 tbsp fresh lime juice
  • 2 tbsp mayonnaise + extra for spreading on the bread
  • ½ tsp curry powder

  • Pinch salt
  • Pinch freshly-ground black pepper
  • Pinch cayenne pepper

  • 4 slices bread, preferably thick slices sourdough bread
  • Few leaves fresh green dhania or coriander or cilantro
  • 4-5 lettuce leaves

Method

  • Cut the chicken breast into cubes or slices.
  • In a bowl, add the cubed chicken and mix in all the other ingredients, except the bread, lettuce, cilantro.

Method

  • Lightly toast all 4 slices bread.
    Keep 2 slices aside.
  • On 2 slices of the toasted bread, spread with a thin layer of mayonnaise.
    Pile a few cilantro leaves and 1-2 lettuce leaves onto each slice.

Method, continued

  • Then divide the walnut-mango-chicken mixture between the two slices.
    Top with reserved two slices and cut in half.
  • Serves 2.
