Kaju Modak: 10-Min Recipe

Lightly-flavoured cashews are the backbone of this Ganesh Puja sweet treat.

Ingredients

  • 1½ cup roasted cashews
  • ¾ powdered sugar

  • 1 tsp rose water
  • ¼ tsp elaichi or cardamom powder

Method

  • In a microwave-safe bowl, add the sugar, cardamom powder, rose water, water and mix well.
    Microwave for 3 minutes.

  • Once the sugar dissolves completely, add the cashew powder and mix well.
    Microwave again for 3 minutes.

  • Take out of the oven and mix well until the syrup and cashew powder blend smoothly.
    The texture should be soft and uniform.

  • Let the mixture cool slightly (warm but not fully cold).
    Start shaping into modaks by hand or with a mould.
    Allow the modaks to set and cool completely.

Tips
Use very finely ground cashew powder for a smooth texture.
Don't let the mixture cool fully before shaping the modaks; it hardens quickly.
Add a few saffron strands or chopped nuts for garnish.
