Kaju Barfi: 20-Min Recipe

Take a chance at making one of India's most favourite sweets with this cinch recipe. The cashews should be soaked beforehand and the barfis can be turned out in less than half an hour.

Ingredients

  • 1 cup whole cashews
  • 3 cups sugar
  • 3 cups water

  • ½ tsp green elaichi or cardamom powder
  • 5-6 tbsp ghee + a little extra to grease the thali

Method

  • Soak the cashews in water for at least six hours beforehand.
    Drain and grind into a fine paste.

  • In a saucepan or a large kadhai, over low heat, make a syrup of sugar and bring it to a one-thread consistency.
    Slowly add the kaju paste and continue to cook over low heat, gradually adding the ghee while stirring continuously.

  • When the mixture leaves the sides of the pan, add the elaichi powder.
    Grease a thali with ghee and take the kaju mixture off the heat and evenly pour into the thali.

  • Allow it to cool.
    Cut it into desired shapes -- triangles, diamonds, squares etc.
    Serve at room temperature; Makes 15-18 pieces.

Tips
Store in an airtight container and it will last for 15 days at least.
