15-Min Recipe: Citrus Salad

This zesty salad offers a burst of sunshine in every bite... It combines grapefruit and orange segments with creamy yoghurt, spiced walnuts, mint and is a refreshing way to fuel your day.

Ingredients

  • 1 tbsp unsalted butter
  • 1 cup whole walnuts
  • 2 tbsp sugar

  • ¼ tsp red chilly powder or paprika
  • 1 cup full-fat Greek yoghurt
  • 1 lime, zested (its peel scraped and added) and juiced

  • 1 tbsp honey
  • 1 medium grapefruit, segmented
  • 2 medium oranges, segmented

Method

  • Line a sheet pan with parchment paper and keep aside.
  • Warm a frying pan over medium heat and melt the butter.
    Once melted and foamy, add the walnuts, sugar, chilly powder and stir.

  • Cook the walnuts and stir for about 5 minutes, or until the sugar mixture melts and begins to coat the nuts.
    Take off heat and immediately spread the nuts onto the sheet pan in a single layer to let cool and harden.

  • Meanwhile in a medium bowl, combine the yoghurt with the honey, lemon zest, juice and whisk until well-combined.
    Fold in the cooled walnuts, reserving 2 tbsp for garnish.

  • Spread the yoghurt/walnut mixture on a serving platter.
    Scatter citrus segments on top the yoghurt, followed by the remaining walnuts, mint leaves and a pinch of flaky salt.
