Chicken Foo Yung: 15-Min Omelette Recipe

An Indo-Chinese take on eggs, Hitesh Harisinghani makes Chicken Foo Yung, a delicious, healthy omelette with chicken and vegetables.

Ingredients

  • 2-3 eggs, beaten
  • 100 gm chopped chicken, boiled

  • 3-4 pods garlic, sliced
  • 1 green chilly, chopped lengthwise into a few pieces

  • 1 tbsp chopped carrots
  • 1 tbsp chopped green capsicum
  • ½ an onion, sliced

  • 1 tsp soy sauce
  • 1 tsp white vinegar
  • ½ tsp black pepper powder

  • ½ tsp haldi or turmeric powder
  • Salt to taste, about 1 tsp
  • 1 tbsp oil

Method

  • In a a frying pan, heat the oil over medium heat.
    Add the garlic, onions, chillies and fry a few minutes.

  • Add the carrots, capsicum and saute for 2-3 minutes more.
    Add the chicken, salt, turmeric powder, black pepper powder, soy sauce, vinegar and mix well.

Method continued

  • Now add the beaten eggs and cook for 2-3 minutes.
    Flip the omelette and cook for 2 minutes more.
  • Serve hot, with Szechwan sauce
