Khoya-Sounf Modak: 15-Min Recipe

Try all sorts of funky new stuffings while making modaks. Khoya or rich milk solids, spiked with saunf, makes a splendid variety of modaks.

Ingredients

  • 1½ cup grated mawa or khoya or milk solids
  • ½ cup sugar
  • 2 tsp ground saunf or fennel seeds

  • 6-7 chopped pistachios, chopped
  • 1-2 tsp rose water
  • 1 cup rice flour

  • 2 tbsp oil + extra for making the modaks
  • Salt to taste, about ¼ tsp
  • 1½ cup water

Method

  • In a microwave safe bowl, add the ingredients for the stuffing, mix well.
    Cook on microwave mode for 3 minutes, cool and keep aside.
  • In another microwave safe bowl bring the water, oil, salt to boil by heating 2 minutes in the microwave.

  • Gradually add the rice flour to the boiling water, stirring continuously until all the flour is incorporated.
    Microwave again for 2 minutes until the mixture comes together as a dough.
    Cool, cover with a clean, moist kitchen towel.

  • Grease your hands lightly with oil, take a small ball of the dough, and flatten it slightly.
    Place the khoya stuffing in the centre and fold the dough over it.
    Shape it like a modak.

  • In a microwave large bowl, bring 1 cup of water to a boil in the microwave in 2 minutes.
    Arrange the modaks on a microwave safe idli plate and place over the bowl of hot water.
    Cover and steam 5 minutes in microwave mode and serve warm.
