Greek Salad: 5-Min Recipe

This Greek Salad gets its fresh, almost gourmet taste from crunchy cucumbers, excellently-selected tomatoes, olives, red onions and creamy feta that gives the salad its signature flavour.

  • 1 cup diced cucumbers
  • ¼ cup crumbled feta

  • 2 tsp finely chopped garlic

  • 2 jalapenos peppers, finely chopped
  • ¼ cup diced very fresh, top quality tomatoes

  • ¼ tsp dried oregano
  • 1 tsp dried parsley or 2 tbsp chopped fresh parsley
  • Salt to taste, about 1 tsp

Method

  • In a large bowl, toss together the cucumber, feta, onions, capsicum, olives, chopped jalapenos, tomatoes.

  • Add in the spices and add the salt and toss again.
    This easy-to-make salad can be made a few hours in advance and stored in the refrigerator; Serves 2-3.
    Serve with pasta or as a side with soup.
