Gobi Ka Kheer: 20-Min Recipe

A creamy Indian-style pudding made from -- wait for it -- cauliflower and it's yum!

Ingredients

  • 100 gm cauliflower, grated
  • 2 cups milk
  • 15 gm cashews, broken
  • Water

  • 10 gm almonds, sliced
  • 10 gm walnuts, broken

  • Pinch saffron
  • 3 tbsp sugar
  • 2 pieces elaichi or cardamom, seeds powdered

Method

  • Pressure cook the grated cauliflower in a little water over medium heat for 1 whistle.
    Open the cooker and cook for a few minutes more, drain the water and keep aside.
  • Bring the milk to a boil in a saucepan over medium heat and reduce heat allowing the milk to continue to simmer.

  • Pour out ½ cup hot milk and add the saffron to it and keep aside.
  • Add the cauliflower to the simmering milk.
    Add the almonds, cashews, walnuts, raisins and simmer for 5 to 8 minutes more.

  • Add the sugar and simmer for a minute more.
    Add the saffron milk to the kheer.

  • Add the cardamom, cover and take off heat.
  • Serve warm or chilled; Serves 3-4.
