A creamy Indian-style pudding made from -- wait for it -- cauliflower and it's yum!

100 gm cauliflower, grated
2 cups milk
15 gm cashews, broken
Water

Pinch saffron
3 tbsp sugar
2 pieces elaichi or cardamom, seeds powdered

Method
Pressure cook the grated cauliflower in a little water over medium heat for 1 whistle. Open the cooker and cook for a few minutes more, drain the water and keep aside.
Bring the milk to a boil in a saucepan over medium heat and reduce heat allowing the milk to continue to simmer.
