10-Min Recipe: Mushroom Spinach Omelette

Ingredients

  • 5-6 button mushrooms, sliced
  • 2 eggs

  • Handful chopped spinach
  • ½ an onion, sliced
  • Dash milk, optional

  • 1 green chilly, chopped or use whole
  • 2-3 pods garlic, sliced
  • Oil

  • ½ tsp haldi or turmeric powder
  • ½ tsp black pepper powder
  • Salt to taste, about 1 tsp

Method

  • Beat the eggs with the salt and keep aside.
  • Add a little milk for a fluffy omelette.

  • In a frying pan, over medium heat, warm the oil and add the garlic and saute.
  • Add the onions, green chilly, mushrooms and saute for a few minutes.

  • Add the turmeric powder, pepper, salt and saute for 3-4 minutes more.
    Then add the spinach and let it cook for 2 minutes.

  • Add the beaten eggs and let it cook for 2 minutes.

  • Flip the omelette it and let it cook for 2 minutes more.
    Take off heat and serve hot with toast/bread.
