Diwali Recipe: Walnut Paneer Kebab

Hemasri Subramanian's Walnut Paneer Kebab is a delicious vegetarian treat -- the walnut provides the crispness and the paneer makes it luxuriously soft within.

Ingredients

  • 1 cup toasted walnuts + a few extra toasted chopped for garnish
  • 200 gm paneer
  • 3 garlic pods

  • 2 green chillies
  • ½ tsp chilly powder

  • 1 tsp jeera or cumin seeds
  • 1 tsp brown dhania or coriander powder

  • 1 tsp chaat masala
  • ½ tsp aamchur or dried mango powder
  • ½ tsp garam masala powder

  • Handful fresh green dhania or coriander leaves or cilantro
  • Handful mint leaves
  • 1 tbsp oil

Method

  • Grind the toasted walnuts in a food processor/mixer till fine.
    Add into the mixer, the paneer, garlic, ginger, green chillies, coriander leaves, mint leaves, salt along with all the spices and grind to a coarse mixture.

  • Add the ground mixture into a bowl and take 2-inch balls and flatten into round kebabs.
    Heat the oil in a frying pan and shallow fry the kebabs on both sides till golden brown.
  • Serve hot garnished with chopped California walnuts; Serves 3-4.
