Diwali Recipe: Air Fryer Red Pumpkin Puri

Chef Roopa Nabar on how to make the sweet, traditional Maharashtrian treat that brings warmth and nostalgia to a festive platter.

Ingredients

  •  1½ cups wheat flour
  •  1 cup rice flour
  •  1½ cups boiled, mashed lal bhopla or kadu or red pumpkin
  • Water, if required

  • ¾ cup grated jaggery
  • 1 tbsp til or sesame seeds
  • 1 tbsp ghee

  • ½ tsp elaichi or cardamom powder
  • Pinch baking soda
  • Salt to taste
  • Oil for brushing

Method

  • In a bowl, mix the wheat flour, rice flour, boiled pumpkin, jaggery, and remaining ingredients, except the oil.
    Knead into a soft dough, cover with a kitchen towel and rest for 30 minutes.

  • Divide into 14 to 16 equal balls, flatten each into 2-inch thick discs on a lightly oiled plastic sheet.
    Boil water, over medium heat, in a shallow saucepan or frying pan and blanch puris for a minute and drain on a kitchen towel.

  • Preheat an air fryer to 180°C for 5 minutes.
    Brush oil on a silicon tray, arrange puris on it, brush tops with oil.

  • Air fry at 200°C for 3 minutes till they puff up.
  • Serve warm with yoghurt; Serves: 3-4.
