Dahi Undi: 10-Min Recipe

You can't find a simpler, more palate-pleasing recipe than this South Indian-style yoghurt-rice ball preparation.

Ingredients

  • 2 cups cooked rice
  • 1½ cups yoghurt

  • 1 tsp rai or mustard seeds
  • 8-10 curry leaves chopped

  • 1-2 green chilly, minced
  • 1 tsp oil, preferably sesame
  • Salt to taste, about 2 tsp

Method

  • In a bowl, mix the yoghurt and the rice.
    Add the salt, green chillies.

  • Heat the oil in a small frying pan, over medium heat, add the mustard seeds, curry leaves and allow the mustard to crackle.
    Pour this over the rice-yoghurt mixture.

  • Cool and form small balls of 1½ inch diameter.
    Serve cooled with mango pickle or pour hot rasam over the balls.

Tips
Consider cooking the rice with an excess of water till absorbed so it's sticky and cook along with 4-5 tbsp fresh grated coconut and 1 tbsp grated ginger.
For extra spice, add red chillies to the tadka along with hing or asafoetida, white urad dal or white gram.
Use a good quality rice like indrayani or basmati or ambe mohur.
