Classic Scotch Eggs: 15-Min Recipe

Make your Scotch Eggs with a golden-crisp exterior but jammy when you bite in, the way Chef Ranjan Rajani does.
Swap chicken mince for boiled mashed chickpeas for veggies.

Ingredients

  • 6 eggs
  • 200 gm minced chicken (or 200 gm boiled chickpeas mashed for vegetarians)
  • ¼ tsp chopped fresh green dhania or coriander leaves or cilantro
  • 1 tsp black pepper powder

  • ¼ tsp chopped parsley
  • Salt to taste, about 2 tsp
  • 2 tbsp milk
  • 50 gm maida or all-purpose flour

  • 1 tbsp mustard paste, preferably English mustard
  • ¼ tsp javitri or mace powder
  • 100 gm breadcrumbs, preferably panko
  • Oil for deep frying the eggs

Method

  • Bring a large saucepan of water to a boil over high heat. 
    When it comes to a boil, add 4 of the eggs and boil for 7 minutes and take off heat.
    Cool immediately under cold water, peel and keep aside.

  • In a large bowl, mix together the minced chicken, coriander leaves, parsley, mace powder, mustard.
    Season with ½ tsp of the salt, ½ tsp of the pepper.
    Knead it like dough and keep aside.
  • Meanwhile heat up the oil, in a saucepan or a kadhai, over medium heat, and keep hot in readiness for frying the eggs.

  • Next, crack the remaining 2 raw eggs in a bowl and add the milk and season with ¼ tsp salt.
    Beat and keep aside.
  • Meanwhile, also spread the breadcrumbs on a plate and keep aside.

  • In another bowl, mix the flour along with ¼ tsp of the remaining salt and tsp of the remaining ½ tsp pepper powder.
    Spread evenly on a plate and keep aside.
  • Divide the mince mixture into four parts.
    Take one part of the mince mixture and spread like a thin patty, in the palm of your hand, till large enough to encase a single egg.

Assembly:

  • Roll one egg in the flour mixture and place at the centre of the flattened mince patty.
    Gently encase the egg so that it is covered completely with the mince mixture.
    Then dip this covered egg in the flour, and then into the egg-milk mixture; finally coat with the breadcrumbs.

  • Add the coated egg into the hot oil and fry till golden brown.
  • Repeat the process for the other 3 eggs and the mince mixture.
    Serve with mustard or mayonnaise, with a salad on the side; Serves 2.
