Bhel Puri: 3-Min Recipe

Chef Hiralal, of the former Mumbai Khau Galli restaurant, on how to put together runaway-popular Mumbai's Bhel Puri. With 188 calories per a 1-cup serving it is a preferred snack.

Ingredients

  • 3 cups kurmura or puffed rice
  • 2 medium potatoes, boiled, mashed
  • 1 onion, chopped

  • 4-5 puris
  • 2-3 tbsp green mint chutney

  • 2-3 tbsp tamarind-date chutney
  • 2 tsp chaat masala
  • 2 tsp garlic paste

  • 2 tsp lemon juice
  • 1 cup sev
  • ½ cup chopped fresh green dhania or coriander leaves or cilantro

  • 3-4 tbsp chopped kairi or raw mangoes
  • ½ cup fried chana dal
  • Salt to taste, about 1 tsp

Method

  • In a bowl, toss and mix the puffed rice, potatoes, onions, tomato, crushed puris, green mint chutney, tamarind-date chutney, chaat masala, garlic paste, lemon juice and mix well.
  • Garnish with the chopped raw mangoes, green coriander and sev and serve; Serves 2-3.

Tips
Bhel Puri can have numerous additional chatpata ingredients.
Consider adding a handful roasted peanuts, 3-4 tbsp pomegranate seed pods/arils, a few tsp red garlic chutney, chopped green chillies, dash kala namak.
