Here's how to make Goalondo Steamer Curry or Boatman-style Chicken Curry:
- 500 gm chicken
- 2 large onions
- 8-10 cloves garlic
- 2" ginger
- 4-6 dry red chillies
- 4-5 green chillies or as per taste
- 2 tsp turmeric powder
- 1/2 cup mustard oil
- Salt to taste
- Clean chicken pieces properly.
- Roughly chop onion, garlic, ginger and green chillies and semi-grind the dry red chillies*.
- Marinade chicken pieces with all the ingredients mentioned except salt (this is however, my personal opinion to not to add salt before cooking) and leave it for at least one hour. I prefer to marinate overnight.
- Take the marinated chicken in a thick bottom pan and saute in high flame for 5 minutes and then cook in low flame till the chicken turns tender. No need to add water.
- Delicious Goalondo Chicken Curry is ready!
- *It is better to add semi-ground red chillies for the actual flavour instead of readily available red chilli powder
- Don't add any souring agent like tomato, curd, tamarind etc.
- Don't add any masala like garam masala, coriander powder etc.
- Don't add water as the natural moisture of the chicken and the other ingredients is enough.
- Last but not the least, don't replace mustard oil with any other oil as it is the signature ingredient for Goalondo Steamer Curry.
