How to make turkey this New Year's Eve

Christmas may have come and gone but New Year's Eve is still some days away. So that's just enough time to learn this yummy turkey recipe!

Chef Dhaval Ajmera of ITC Grand Central, Mumbai shares shares with Hitesh Harisinghani his super-secret recipe of making some yummy five-star style turkey.

Ingredients:

  • Turkey breast

For marinating:

  • Olive oil
  • Worcestershire sauce
  • Hoisin Sauce
  • Freshly chopped garlic
  • Pepper
  • Salt

For stuffing:

  • Olive oil
  • Breadcrumbs
  • Finely chopped parsley and sage
  • Onions
  • Shallow fried
  • Chopped garlic
  • Bacon
  • Salt

For garnishing:

  • Orange jelly
  • Chilly oil
  • Parsley
  • Sage
  • Mashed potatoes

Method

For marinating

  • Whisk olive oil, Worcestershire sauce, Hoisin Sauce, freshly chopped garlic, some freshly ground pepper and salt
  • Slit the turkey into half and marinate well
  • Let it marinate for over 12-14 hours

For stuffing

  • Mix breadcrumbs, finely chopped parsley and sage, onions, shallow fried chopped garlic, some chopped bacon (optional) salt and olive oil.
  • Stuff it inside the turkey and fold it into half -- this is the trickiest part.
  • Let it rest for 15 minutes.
  • Then on a pan roast it well -- about 6-7 minutes on either side
  • Don't bother if the stuffing inside is raw because it will get cooked inside the oven.
  • Preheat the oven at oven 150C cook for about 20-30 minutes.
  • Once you remove the turkey, heat the sauce that has come out of the turkey.

How to serve:

  • On a plate dice some boiled vegetables into baton-sized pieces and arrange them at the centre of the plate
  • Add some mashed potatoes on the side
  • Cut the cooked turkey into 2-3 pieces and place it on top of these.
  • Garnish with orange jelly and chilly oil.
