Holi recipe: How to make Puran Poli

Method

For the filling

Soak the chana dal in water for up to four hours.

Pressure cook the dal in 2.5 cups of water for up to four whistles.

Drain the water and mash the dal to avoid lumps.

Add jaggery, ginger powder, cardamom powder and salt to the dal.

Mix and cook this mixture till it becomes thick and dry. Keep aside to cool.

Make medium sized balls of this mixture and keep aside.

For the cover

Mix the flour, oil, water and salt and knead them into a smooth dough.

Divide it into medium sized balls.

Using a roller pin, roll each into small circles, the size of a puri.

Take one ball from the filling mixture, and place in the centre of this puri.

Now, carefully pack the filling by bringing together all the ends of the dough to form a ball.

Roll gently to the size of a poli (flatbread). Repeat it for the rest of the dough.

Heat a flat pan and add some ghee.

Place the poli and fry on both sides with oil or ghee till golden brown.

Serve Puran Poli hot or warm with ghee.
