Cook up Paneer Tawa Tikka and other tasty recipes

We invited readers to share some of their favourite recipes with us. As part of a continuing series, we publish four of these lip-smacking recipes we've received so far:

First up, here is Ruchika Ghai's preparation for Instant Rawa Pizza:

Cuisine: Indo-Italian

Type: Vegetarian

Preparation time: 30 minutes

Ingredients:

  • 1 cup rawa (suji)
  • 1 cup sour curd
  • 1/4 tsp sweet soda powder
  • 50 gms cabbage
  • 1/2 tsp ajwain
  • Salt to taste

For topping:

  • 1 onion
  • 1 capsicum
  • 1 tomato
  • 100 gms paneer
  • 2 tbsps white or yellow butter

Preparation:

  • Mix the rawa, curd, salt, ajwain and soda powder. Place in a greased aluminium bowl.
  • Place a jaali in a cooker and heat, then place the above bowl on the jaali and heat the cooker for 20 minutes. The pizza base is ready.
  • Cover the pizza base with tomato sauce.
  • Cut onion, capsicum into fine pieces and grate paneer. Spread on the base, sprinkling the paneer last.
  • Dot the other side of the base with butter.
  • Put in cooker and bake for 10 minutes on a slow flame till the toppings get soft and butter melts. Serve.

Next we have how to make Vermicelli from Aisha Sanobar:

Cuisine: Indian

Type: Vegetarian

Preparation time: 10 minutes

Ingredients:

  • 2 cups vermicelli
  • 1 onion cut in thin slices
  • 1 tomato cut in small pieces
  • Few curry leaves
  • Mustard seeds
  • 1 tsp ginger-garlic paste
  • A pinch of haldi
  • Salt to taste
  • 1/2 tsp chillie powder
  • 2 tbsp oil

Preparation:

  • Heat oil in a pan, add the mustard seeds and once they crackle, add the onions.
  • Let them soften up a bit, then add the ginger-garlic paste, salt, chillie powder, haldi and tomatoes.
  • Let the oil separate and then add the curry leaves and turn off the stove.
  • In another utensil, boil water and then add the vermicelli. Boil for 5 minutes and strain. Pour cold water over it to cool and then add to the mix made previously. Stir well, heating for about a minute on the stove and serve hot with coriander garnish.

Here, Sheenu Garg tells you how to cook Italian-style Paneer Tawa Tikka:

Cuisine: Indo-Italian

Type: Vegetarian

Preparation time: 10 minutes

Ingredients:

  • 250 gms paneer
  • 1 pinch chillie flakes
  • 1 pinch oregano
  • 5 gms malai (cream)
  • 5 gms desi ghee
  • Salt

Preparation:

  • Make cubes of the paneer.
  • Take the malai in a bowl, add the salt, chillie flakes and oregano. Mix well.
  • Add the paneer cubes and mix again.
  • Heat a tawa on a high flame and pour in ghee. Add the paneer cubes one by one and keep flipping them so they cook evenly.
  • Delicious Italian-style Paneer Tikkas are ready. If need be, garnish with a pinch of oregano.

Health quotient: It's the least fatty, lightest paneer tikka you can prepare.

And finally, we have Meenakshi Singh's recipe for Stuffed Mushroom Omelette:

Cuisine: Unknown

Type: Vegetarian

Preparation time: 15 minutes

Ingredients:

  • 2 eggs
  • 10 mushrooms
  • 1/2 a small onion, chopped
  • 1/4 of a small green pepper, chopped
  • 1/2 tsp ginger-garlic paste
  • Grated cheddar cheese
  • A few drops of milk
  • Black pepper
  • Red chillie powder
  • Oregano
  • Salt to taste

Preparation:

  • Microwave or pan-cook mushrooms for 2-3 minutes, adding chillie powder, ginger-garlic paste and salt.
  • Beat the eggs separately and add a few drops of milk.
  • In a pan, heat oil and add onions, green pepper, oregano, salt and black pepper. Then add the eggs.
  • When the base sets in, add the mushroom fried mixture and grated cheese and fold the omelette. It is ready to serve.

Health quotient: Mushrooms and eggs are healthy.
