Fish Bhurji, Dahi Aloo and more delicious recipes

We invited readers to share some of their favourite recipes with us. As part of a continuing series, we publish five of these lip-smacking recipes we've received so far:

First up, here is Rajnish's Poached Egg Curry preparation:

Cuisine: Indian

Type: Non-vegetarian

Preparation time: 10 minutes

Ingredients:

  • 2 eggs
  • 1 sliced onion
  • 4 chopped pods of garlic
  • Paste of a half-inch ginger piece
  • Coriander powder
  • Green coriander leaves
  • Garam masala
  • Turmeric powder
  • 50-100 ml oil
  • Salt and chillie powder to taste

Preparation:

  • Heat about a cup of water in a pan and break the eggs in boiling water.
  • Drain out the water and make small pieces of the poached egg.
  • Fry the onion, garlic and ginger paste in a frying pan till brown. Add salt, turmeric and chillie. Fry for another minute and add the poached eggs.
  • Fry for two more minutes and flavour with a little garam masala powder and coriander leaves.
  • Serve hot with chapati/ rice.

Health quotient: Eggs provide all that is needed.

Next we have Ganesh's mom's recipe for Dahi Aloo:

Cuisine: Gujarati

Type: Vegetarian

Preparation time: 10 minutes

Ingredients:

  • 1/2 kg potatoes
  • 1 cup curd
  • 1 tsp ghee
  • 2 green chillies
  • 1/4 tsp jeera
  • 1/4 tsp mustard seeds
  • A sprig of karipatta (curry leaves)
  • A pinch of hing
  • A pinch of turmeric
  • Salt to taste

Preparation:

  • Boil and cube potatoes. Add curd to them and mix, then set aside.
  • Melt the ghee in a pan and add all the ingredients except the potatoes.
  • Once the pan starts to sputter, add the potatoes and fry well.
Health quotient: It does not contain much oil nor masala.

Tapan Kumar Chatterjee sent in an original recipe for Fish Bhurji:

Cuisine: Indian

Type: Non-vegetarian

Preparation time: 25 minutes

Ingredients:

  • 250 gms fish
  • 1 chopped onion
  • Ginger
  • Cumin powder
  • Turmeric
  • Chillie powder
  • Salt to taste
  • 5 tsp oil
  • 1/4 tsp garam masala
  • Coriander leaves to garnish

Preparation:

  • Boil the fish and de-bone it. Then mash.
  • Fry the chopped onions till golden brown and add salt, turmeric, chillie powder and cumin powder and fry for 2 minutes.
  • Add the fish to the masala and stir for a few minutes.
  • Garnish with coriander leaves and serve hot with parathas or rotis.

Health quotient: It does not contain much oil and all the items used are fresh.

Here's how to prepare Dal Dhokli by PSK, as per a friend's instructions:

Cuisine: Gujarati

Type: Vegetarian

Preparation time: 1 hour

Ingredients:

  • 1 cup toor dal
  • 1 cup atta (flour)
  • 1 onion (chopped)
  • 1 tomato (chopped)
  • 1 medium-sized potato (diced)
  • Corn kernels
  • A pinch of turmeric
  • 1 tbsp red chillie powder
  • 1 tbsp dhaniya masala
  • Salt as per taste
  • 1 pinch of ajwain
  • 1 tbsp oil
  • 1 tbsp jeera

Preparation:

  • Cook the dal and potato in a pressure cooker.
  • Knead the atta along with a pinch of turmeric, red chillie powder and ajwain.
  • Make small peach-sized balls from the dough and roll into a thin, round patty and cut them into square/ diamond shaped pieces.
  • In the pressure cooker, heat some oil. Add jeera and onion and saute till the onion becomes golden-brown.
  • Add tomatoes and saute for 5 more minutes
  • Add the boiled potato and corn and all the masalas. Then add cooked dal.
  • Add water. The quantity must be such that all the ingredients are immersed in water.
  • Add the pieces of dough cut earlier.
  • Close the lid and leave the cooker on a medium flame.
  • Turn off the flame after 10 minutes.
  • Dal Dhokli is ready to serve. Add dhaniya leaves for seasoning

Health quotient: This is a wholesome and complete dish containing roti, dal and sabji. You can add or skip more vegetables as per taste. It is the Gujarati version of pasta and you can see for yourself how healthy it is.

And finally, we have this recipe for Mushroom Pepper Dry from Rohini:

Cuisine: Chinese

Type: Vegetarian

Preparation time: 10 minutes

Ingredients:

  • 1 packet mushrooms
  • 4-5 tbsps powdered pepper
  • Salt to taste
  • 2 tbsps oil
  • A pinch of turmeric

Preparation:

  • Clean the mushrooms in hot water with a little salt and tumeric, then dice.
  • Heat the oil in a pan, and add mushrooms -- fry for 2 minutes.
  • Add salt and pepper, close the lid and fry for 5 minutes more.
  • Your Mushroom Pepper Dry is ready -- it's a great starter.

Health quotient: Mushrooms are a great source of vitamins.
